Caprese Stuffed Portobello Mushrooms

Caprese Stuffed Portobello Mushrooms are a delightful, savory dish that combines the classic flavors of a Caprese salad with the earthy taste of portobello mushrooms. This recipe is perfect a low carb option for a light lunch, a delicious appetizer, or a satisfying vegetarian dinner.

Ingredients

  • 4 large portobello mushrooms, stems removed and cleaned

  • 3 tablespoons olive oil, divided

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • 8 ounces fresh mozzarella, sliced and patted dry

  • 1 cup halved cherry tomatoes

  • 1/2 cup fresh basil leaves

  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Combine 2 tablespoons of olive oil, salt and pepper in a small bowl. Using a pastry brush, evenly coat all side of the mushrooms with the oil mixture. Place them on a large, rimmed baking sheet, gill-side up. Bake for about 10 minutes or until the mushrooms are mostly soft. While the mushrooms are baking, stir the mozzarella, tomatoes, and basil together in a medium bowl. Add 1 tablespoon olive oil and salt and pepper to taste.

  2. Stuff the Mushrooms:

    • Remove the mushrooms from the oven and fill the mushroom with the tomato mixture.

    • Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  3. Garnish and Serve:

    • Remove the mushrooms from the oven and top each with fresh basil leaves.

    • Drizzle with the remaining tablespoon of olive oil and balsamic glaze.

    • Serve immediately and enjoy your healthy caprese stuffed mushrooms!
